How to Store Charcoal So It Stays Dry, and Does Charcoal Go Bad?

How to store charcoal at home or in a restaurant, whether charcoal goes bad, and what to do when charcoal gets wet.

Store charcoal dry, off the floor and in a closed container or sealed bag, somewhere cool and away from anything that can catch fire. Kept that way, charcoal does not go bad; it can sit for years and still burn well. Its one enemy is moisture. Charcoal that has taken up water is harder to light, burns cooler and, in the case of binchotan, can crack and throw sparks. Wet charcoal can usually be saved by drying it thoroughly.

Does charcoal go bad?

Charcoal is mostly carbon, and carbon does not rot, spoil or lose energy with age. What changes over time is how much water it holds. Charcoal draws moisture from the air like a sponge, so a bag left open in a damp garage for a season will be heavier and harder to light than the day it was opened. Briquettes have a second weakness: the binder that holds them together can soften when wet, and the briquettes crumble. Whole-wood charcoal, and binchotan in particular, keeps its shape.

How to store charcoal

  • Keep it sealed. Close the bag tightly or move the charcoal into a metal bin or a plastic box with a lid. Our export cartons have an inner plastic bag for this reason; keep it closed between uses.
  • Keep it off the floor. Concrete floors pass moisture into anything standing on them. Use a shelf or a pallet.
  • Keep it cool and ventilated. Avoid spots next to boilers, ovens or sunny windows.
  • Keep it away from fuel and flammables. Do not store charcoal next to lighter fluid, gas bottles, paper stock or oily rags.
  • Never store charcoal that is still warm. Leftover charcoal from the grill must be completely cold, which can take many hours, before it goes back into a bag or a box.

Storing charcoal outside

It can be done, but only under cover. Use a lidded bin or a dry box under a roof, raised off the ground, so that neither rain nor ground moisture reaches it. A tarp on its own is not enough; condensation collects underneath.

Storing charcoal for a restaurant or warehouse

  • Stack cartons on pallets, not directly on the floor, and leave a gap from the walls so air can move.
  • Use the oldest stock first.
  • Keep the storage area cool, dry and free of ignition sources, and keep a fire extinguisher nearby.
  • Bring into the kitchen only what one or two services need, and keep that supply closed too. Kitchens are humid.

Charcoal in bulk is treated with care for a reason: for sea transport it is classed as a substance liable to spontaneous combustion. In normal storage, keeping it cool, dry and ventilated is what matters.

Charcoal got wet: can you still use it?

Usually yes, once it is properly dry.

  1. Spread it out in a single layer somewhere dry and airy, or in the sun.
  2. Give it time. Surface damp dries in a day; charcoal that was soaked can take several days, because water sits deep in the pores.
  3. Test a few pieces before you rely on it for a service.
  4. Warm it slowly the first time. Put damp-feeling binchotan at the edge of the chimney or near, not over, the flame, so trapped water escapes as steam gently instead of cracking the stick.

Briquettes that have turned soft or crumbly are not worth saving.

Why binchotan sparks, and how storage prevents it

When binchotan pops and throws sparks while lighting, the cause is almost always moisture trapped inside the stick that turns to steam. Dry storage is the fix. Our binchotan measured 2.05 % total moisture as received in a Sucofindo laboratory report dated 27 July 2026; keeping it sealed keeps it close to that. More on lighting it without sparks: how to light binchotan charcoal.

Storing used binchotan

Binchotan that was put out by shutting it in a lidded metal pot can be reused. Let it cool completely, then store it with the rest of your charcoal and mix it with fresh sticks the next time you light the chimney.
